As far as I know, only Filipinos get really excited and nostalgic about fried spam for breakfast, eaten with garlicky fried rice and eggs. Spam is a throwback to WWll when it was brought to the islands by the GI's, and the habit stuck (along with other strange canned meats such as canned corned beef and vienna sausages).
If I was really feeling motivated, I would chop up onions and tomatoes, put them in fish sauce and vinegar, and spoon it over the whole works. But I wasn't, this morning. Thursday, Sept 3.
